Your First Pizza Game Plan

The easiest first pizza is not the most ambitious one. Use dependable dough, prepare everything before heating the oven, and make a simple margherita before experimenting.

Set up before the oven is hot

Portion the sauce, drain the cheese, flour the bench, and keep both peels within reach. Bring the dough to room temperature until it feels relaxed but still holds its shape.

Preheat the oven and stone fully. An oven that looks hot can still have a cool floor, which leaves the base pale while the toppings overcook.

Make the first pizza a test

Stretch one dough ball gently, add a thin layer of sauce and a small amount of cheese, then check that it slides freely on the peel. The first bake tells you whether to adjust the flame, floor temperature, or topping amount.
